Impairment of oral and teeth health not only affects them, but also deeply affects our whole body. Therefore, this week we are together with Ass. Prof. Dr. Tosun Tosun, prominent for his scientific researches in Turkey as well as whose family has worked as dentist for 8 generation. Taste and delicious foods mean a lot for Mr. Tosun who works as a guest scholar in Italy Genoa University, besides serving in his private office in Turkey. Cooking and eating are a global world for Ass. Prof. Dr. Tosun who knows English, French, Spanish, Italian and Portuguese.. Mr. Tosun who says he normally likes cooking has also worked as “kitchen maid” for a reputable Italian Cook in the kitchen for a year while he was working as a translator for him. Tosun Tosun who says he has learnt to cook and discover different tastes sometimes cooks healthy foods for his family and friends. Ass. Prof. Dr. explains the menu, composed of fluorine rich foods which are good for oral and teeth health, he has prepared for RAILLIFE Readers:
MENU OF THE MONTH:
- Celery soup
- Jumbo shrimp with tomato sauce
- Bonito cooked with sage, within paper
- Mediterranean salad served with herbs
Ingredient: 2 medium sized celeries / 1 carrot/ 2 potatoes/ 1 tea cup olive oil / 1 dessert spoon salt / 1 dessert spoon black pepper/ 1 glass milk / 1 table spoon flour.
Method: Thoroughly wash vegetables, peel them off and chop the vegetables. Allow them in lemon water. Boil 5 glasses water and put the entire vegetables in the water. Add half of the salt, black pepper and olive oil. When the vegetables soften, blend the vegetables with blender until they become mash. In another saucepan cook two table spoons flour, glass milk, and one soup spoon oil at the middle heat. Add them to the mash and mix it thoroughly. Add the olive oil on it and service it.
Jumbo shrimp with tomato sauce
Ingredients: 3 jumbo shrimps (per person) / 1 tea cup olive oil/ 50 gr. grated parmesan / optionally, black pepper/ 5 big sized tomatoes.
Method: Put the tomatoes in thoroughly boiled water, peel them off after they have been thoroughly boiled and chop them. Thoroughly wash the shrimps. Remove the shrimp heads and put them into the tomatoes. Boil them thoroughly. Since the shrimp contains so much salt, you do not need to add salt. When tomatoes become mash, take the heads from the saucepan. In another saucepan, cook the shrimps by adding olive oil, black pepper and parmesan on them. Service it with tomato sauce.
Bonito cooked with sage, within paper
Ingredients: 1 bonito (per person- cut as medallion)/ Oily Paper / Twine/ Olive Oil/ Salt/ Black Pepper/ Sage
Method: Place 3 pieces bonito on the oily paper you cut, optionally sprinkle salt and black pepper on them. Add olive oil and one pinch sage on the bonitos. Wrap the oily paper and fasten it with the twine on two sides. Place them in the tray. You can service it after baking for half an hour.
Mediterranean salad served with herbs
Ingredients: 1 small-sized lettuce / ½ bunch mint/ 4-5 bunches fresh basil/ ½ parsley/ 3-5 scallion s/ 5 cherry tomatoes/ Vinegar/ Olive oil/ Salt
Method: Cut the scallion into slices. Cut the cherry tomatoes into two slices. Having thoroughly washed all green salad, cut them with hands and put into a pot. Add vinegar, salt and olive oil. Then, put them into the salad pot.
How does fluorine affect oral and teeth health?
The fluorine required for firm dental tissue is abundantly found in the green leaves vegetables, seafood, egg and speciality meats. You may consider the fluorine as repair man. The foods we eat mostly contain acid.. Since vegetables and fruits contains excessive amount of acid. However, all of the mammals and human beings have such mechanisms in the bodies: the fluorine present in the saliva comes to the rescue. When acid starts dissolving the tooth enamel, electrical balance of the ratio also degrades. When the calcium and phosphate dissolve, it draws the fluorine like a magnate, the fluorine sticks that area as a graft and starts to remedy. This is why nourishing with fluorine rich foods are important.
For the centuries, the foods of the human beings change. We started to buy cooked foods rather then foods which are mostly chewed. Liquid foods increased and convenience foods take their place in our lives.
How are the teeth affected by this matter?
Unfortunately, acid erosion that dentists have not encountered in the previous centuries has become one of the main problems in the 20th century as the convenience foods have taken their place in our lives. Since it is necessary to prolong the shelf-life of convenience or canned foods, excessive amount of acid is used. The acid exposed abrades the teeth. There occurs sinuous on the teeth. Normally when the human beings lived in the nature and they eat raw foods, their teeth are also set in this manner. Even cooked foods cause gingival problems. When the foods are not tough enough, they do not clean the tooth by themselves. Thus, it is a must for people to make regular dental care.
DRINK MILK AFTER THE FRUIT
What could be done to keep gingival healthy?
Nobody lives in the nature anymore and eat tough foods. By brushing the teeth, only the surface of the teeth is cleaned. When we could not reach any parts of the tooth and tartar occurs, the bacteria quickly reach there and cause the occurrence of the inflammation in the body. This is why we recommend teeth cleaning once in a year. During this process, gingival is also cared. People are supposed to go to the dentist for a check-up, not when they have toothache.
What do you think about the fruits in terms of dental health?
Even sweet fruits like melon or strawberry contain acid. Of course, we should eat fruits, but we will rinse our mouth with water or consume dairy product after eating the fruit. Milk removes the effects of the acid. But, of course, we recommend you drink the milk without sugar.
A lot of people suffer from mouth sore called as “canker sore”. Does this formula help them, too?
Yes, water with vinegar and clove is an antiseptic, known for a long time. I recommend it for the people suffering from the canker sore. The canker sore occurs when herpes virus emerges in the defence mechanism of the body. It is possible to remove canker sore with laser or ozone treatments. But the point is to strengthen the body. When people are stressed or worked a lot, their defence mechanisms get weak.
Resting is a major treatment for weak defence mechanism. The canker sore has also psychological aspect.

Are teeth whitening gel useful for whitening the tooth?
Yes, but in the long term… These gels contain oxygen. However, the excessive amount of oxygen affects the tissue. In order to avoid damage, the concentration is kept lower for the forms that people used by themselves. There is not any disadvantage of using this product; they can get the results only within a couple of weeks, not in a very short time or one or two days.
VINEGAR AND CLOVE ADDED WATER FOR TOOTHACHE AT NIGHT
Generally, I recommend sage tea for dental health. It must be available in your daily life. When you have a toothache, add a pinch of clove and a tablespoon of vinegar in three cups of water and boil them. You can gargle when warm. The vinegar is effective anti-inflammatory.
