Did you know that the thyroid gland, which is the maestro of our hormones and the balancer of our central nervous system, is a 3-5 cm long butterfly-like organ between the skin and the trachea? With its extreme effect in cases of over and under working of this small but a strong organ and its staggering effects, it may bring our whole system upside down when its balance is off. Your heart’s rhythm may fail, you may not be able to breathe when sleeping; your skin may fade and dry up; you may even not be able to have a child.
For this reason we have searched for the answer to the question ‘what should be done to balance the working of the thyroid glands?’ and have become a guest to the kitchen of endocrine surgeon Prof. Dr. Serdar Tezelman. Prof. Dr. Tezelman, who is also one of the founding members of the European Endocrine Surgeons Association, also has a book titled ‘Thyroid Cancer Codes and Goiter’.

In order to protect from thyroid illnesses what kind of eating habits to we need to have?
People who want to prevent thyroid illnesses should eat fruits with vitamin C such as mandarin, oranges, lemon, broccoli, cabbage, and nuts with vitamin E, leafy green vegetables and beta-carotene containing spinach and dark green plants, carrot, and sweet potatoes. You should consume purple fruits like strawberry, blackberry, raspberry, and blueberry either when they are fresh or store them in your freezer for when you need it. Also sea foods like shrimp and giblets like liver are also helpful. This diet, while being helpful in preventive effect, is also effective in treating people with hyperthyroid and hypothyroid.
Are there foods that people with thyroid illnesses should stay away from?
Fluorine and chlorine negatively affect it. Especially these substances that are used to clean water may negatively effect thyroid’s functions and slow it down. We also do not recommend foods with carbohydrates, sugars, and flour to people with thyroid illnesses. In order for the thyroid to work properly it needs iodine and you can get this from salt. In Turkey most commonly hypothyroid is seen, hyperthyroid is less common. But if your thyroid overworks, then you should buy salt without iodine. If you have hyperthyroid or what we call poison goiter, you must use salt with iodine. You must listen to your doctor.
Diets high in protein are very popular, how do they affect thyroid?
Protein rich diets that are away from carbohydrates are helpful in balancing the thyroid. People’s thyroid functions may be off with sugar rich diets. Additionally, you should stay away from smoking and caffeine.
What is the rate of incidence of thyroid in women and men?
Even though the reason is not known, hyperthyroid, which is the underworking of thyroids is more common in women. But it is the opposite in thyroid cancers. While the risk is about 10 percent in women, it goes up to 20 percent in men. Also, although it is mostly common in middle and elderly, we may be faced with nodule and thyroid cancer cases with children. There may be fatal types of thyroid cancer but by means of a good treatment, the patient can be saved. Not every patient would have to have surgery.
THIS WEEK’S MENU
Steak with tomato paste and oregano
Portulaca salad with lentils
Red fruit torte
CELERY SOUP (6 portions)
3 large celeries
4 table spoon cream cheese
4 cups of water
1 tea spoon salt
Red hot pepper
After washing the celery and peeling it off, you need to boil it in a small saucepan with a little bit of water until it softens. As you add the cream cheese, make the celery into a puree with a blender. Then you can serve it into the bowls after simmering it for one more minute. You can garnish it with small chopped dill and red pepper.
STEAK WITH TOMATO PASTE AND OREGANO (4 portions)
4 pieces of steak or fillet
2 table spoons tomato paste or tomato puree
3-4 cloves of garlic
½ tea glass oregano
1 tea glass olive oil
Lay the steaks on a steel saucepan, slice the garlics in rings and spread the olive oil evenly over it. Wait for ½ hour. In a small bowl mix the tomato paste with a little bit of water to add to the steaks in the saucepan and pour over it. Add oregano, salt, and black pepper and cook for 45 minutes in low heat.
4-5 medium sized potatoes
1 medium sized celery
1 bunch of parsley
1 cup of milk
Wash and peel off the vegetables and add them to the saucepan after slicing them into small pieces. Add a little bit of water just enough to soften them as they boil. After they are softened use a blender to make it a puree. Add a cup of milk and sprinkle salt if you wish and cook it for 10 minutes in low heat.
PORTULACA SALAD WITH LENTILS
1 cup of green lentil
1 bunch of portulaca
2 cloves of garlic
1 tea glass olive oil
1 lemon juice
2-3 table spoons pomegranate juice
3-4 slices goat cheese
Cook the lentils and drain. Spread it over washed and chopped portulaca. Mix in a small bowl the olive oil, lemon juice and pomegranate juice. While adding the minced garlic into this mixture, spread it over the salad evenly. Add the cheese slices over it and serve.
RED FRUIT TORTE
For the dough:
200 gr. flour
60 gr. sugar
125 gr. almond or hazelnut
1 pinch of salt
1 teaspoon of cinnamon
1 teaspoon of baking powder
1 pinch clove powder
1 packet of vanilla sugar
For the filling:
1.5 kg. red fruits (blackberry, strawberry, raspberry and blueberry)
3-table spoon marmalade
Add all the ingredients for the dough and knead it well. Let it cool in the refrigerator by covering it with plastic wrap until you prepare the filling. Mix in the walnut with the fruits and the marmalade.
Take out the dough from the fridge and save some of it aside. Spread the dough in a torte pan or cake pan so that it would cover the sides of the pan. Add the filling over the dough. Then shred the rest of the dough pieces over the filling. Bake it for 45 minutes in a 190 degree pre-heated oven. Make sure to put the torte at the bottom of the oven. As it is close to being baked, spread more marmalade on the torte crust. After it cools down, take it out of the pan and serve.
