ASST. PROF. DR. YAVUZ DIZDAR POINTED OUT THAT THERE IS A SERIOUS RELATIONSHIP BETWEEN CANCER AND NUTRITION AND WARNED: “PEOPLE CANNOT SEPARATE GOOD AND BAD FOOD BUT ANIMALS CAN. IF THEY DO NOT EAT THEN YOU SHOULD NOT EAT.”
You can find radiation oncology specialist Asst. Prof. Dr. Yavuz Dizdar, who works at Istanbul University Medical School’s Oncology Institute, seeing patients from early morning until the evening. We do not know whether it is because he is a witness to many patient stories, his research is focused on not only treatment but also on prevention. He conducts interesting experiments at his house. Especially focusing on personal food experiments, Dr. Dizdar looks at how many days it takes for eggs to rot, sometimes how long it takes for the milk to rot, and the fermentation process of the yogurt.
The ingredients of what you eat is important
He explains the relationship between nutrition and cancer as “What we eat does not matter, the ingredients of what we eat is important. After all we get full. But if you eat food that contains bad ingredients, and eat bad food you would be inviting cancer.” As always since he is experimenting something at his house, this time Yavuz Dizdar is hosting us at his food stylist Inci Bak’s warm, friendly studio atmosphere named ‘eat, drink, shoot studio’. According to Dizdar, even if the food is the same the ingredients are not, thus as he is creating the menu he pays attention to everything that he learned from his mother. Dizdar says: “When we were a child the taste of pasta, the taste of tomatoes were different, we lost it now. The milk tasted like sugar, yogurt sour, fruit was tasty… Now they all taste similar to each other. Because the taste and the ingredient of the food decreased.” And he answers our questions like this:
What does it mean for the ingredient of the food to be decreased?
People need aromatic compounds to live healthy. These compounds that are available in natural foods and cannot be made by human bodies, and these supply the communication between the interim permeators like nerves. When these are not supplied enough, the function changes and the relation with cancer starts.
Which changes affected the food?
For the food to be packaged and in order to protect it longer, there are too many physical processes that take place. Such as pressure… Normally there should not be a pressure process in food. You take it and then process it with 140 bars pressure. This is around 1400 meters water pressure. When you put too much pressure, it creates cross links. The milk does not smell, the yogurt does not go bad… It means that these ingredients are absent… Sometimes they actually do other processes in order to decrease this period.
Food industry does not put anything harmful in the foods, but because of the methods they use, they cause the good stuff to die out… Of course, not only you should not eat genetically modified products, but also you should not consume products of animals that are fed by them. This is one of the reasons that the cancer cases have increased.
Is it related to the reason why the flies and bees do not fly on our food anymore?
Of course… The bees and flies are after the gassy and sweet drinks. Now even if you pour it in front of them they do not come. People do not have the ability to differentiate things to eat. But animals have the impulse the given ability to separate what can be eaten or not. There are cats and dogs that do not eat certain sausages. They do not drink processed milk. It is an easy test, especially before you eat any animal product you should try to serve it to your cat, dog, or the animals on the street. If they eat it, then you may eat it, but if they do not then you should not eat it. I can give you an interesting example. For instance, you should put aged cheddar cheese on the stove. If it does not melt, then it is real, but if it melts it is not a good cheese. You should not buy the sausage that is not kept in intestine skins.
So what would people eat and drink then?
The animals should be fed with natural and quality foods. From time to time we bring milk from Anatolia. To tell you the truth those milks taste like a pudding. Very delicious. When it goes bad, it reaches a strong fermentation state. Though in most milk and yogurt this taste is not present. You think that you are eating fish, but in farm raised fish the taste of sea is not there. Additionally it needs to be a migrating fish. People who are eating good nutrition would not gain weight.
Are there good foods that protect us?
The soups and dishes that contain bone marrow broth are good for your health. For example, I recommend sheep’s foot soup to those who do not want to get sick and my patients as well. They should try to add bones into their foods. Whole wheat bread can be eaten. Ground wheat dish (specialty called keshkek) is very nutritious. The relationship with sugar should be disengaged.
Hamsi (Turkish anchovies) in the oven
Home made pasta with tomatoes and peppers
1 tablespoon olive oil
1 tablespoon tomato paste
1 tablespoon pepper paste
1 medium sized tomato
1 cup tarhana powder
3 cloves of garlic
1 teaspoon red pepper
In a pot add 1 tablespoon olive oil, 1 tablespoon tomato paste, 1 tablespoon pepper paste and stir. Cut the tomatoes in small cubes or grate it and add. Add the tarhana powder into the mixture and sauté. Stirring slowly add in 5 cups of water. Add in the crushed garlic. At low heat, stir the soup slowly until it boils. After it boils add in the 1 teaspoon of red pepper and serve. You may add sumac if you wish.
HAMSİ IN THE OVEN
1 kg. hamsi
2 medium sized onions
3 cloves of garlic
2 green peppers
Half cup of olive oil
Take out the bones of the fish and sprinkle salt and put them together. Slice the onions in rings, cut up the garlic in small pieces and lay them on the oven tray. Then put over the fish over these. Slice the tomatoes in rounds, slice the peppers in long slices and add over the fish. Add the olive oil and bake in the 200 degree pre-heated oven.
HOMEMADE PASTA WITH TOMATOES
400 grams of homemade pasta
2 medium sized onions
3 green peppers
2 cloves of garlic
2 tablespoons of olive oil
1 tablespoon of butter
Sautee the onions in olive oil, add in the small diced garlics and the green peppers. Add in the cubed tomatoes. Add the homemade pasta and stir a little. Add the butter and water that would be just above the mixture. After the first boil, cook it in low heat.
